I hope you enjoy my daughter-in-law’s wonderful Zucchini Cake!! We sure do!
Heidi Lane’s Zucchini Cake
3 Cups Flour 1 Tsp Vanilla (I’ve been known to double this!)
3 Cups Sugar (I sometimes exchange 4 Eggs
one cup with Brown Sugar)
1 Tsp Salt 1 ½ Cup Vegetable Oil
1 ½ Tsp Baking Soda 3 Cups Grated Zucchini
2 ½ Tsp Cinnamon (I’ve used 3 Tsp)
Combine dry ingredients in bowl.
In separate bowl, beat together vanilla, eggs, vegetable oil. Add Zucchini.
Stir into dry ingredients.
Put in 9 x 13 pan (or two smaller pans).
Bake 325 Degrees for 25 minutes or until toothpick comes out clean.
Cool on cake rack.
